Both, and they work differently underneath. A class has a cap and counts down as it fills; a one-to-one holds a coach’s time the way a stylist booking would. Which one applies comes out of how you described what you run — you do not pick a mode.
What happens when a class is full?
It says so plainly and offers the nearest classes that still have room, instead of quietly moving somebody to a time they never agreed to. Someone turning up to a session they thought they had booked is worse than not getting the booking.
Can it stop people being booked onto a class the coach does not teach?
That is part of it. Which coach runs which class is something you described once, and it is checked before anything is offered — so a substitution you never agreed to cannot appear in the timetable.
