How does it know whether we cover an address?

You describe the area once and it checks on the call. In the recording the North Vancouver address is checked before any slot is mentioned — in French, because that is the language the caller had switched to.

Our cleaners work different days. Will it respect that?

Each one has their own days and hours, read from what you wrote. Someone off on Wednesdays is not offered on Wednesdays, and you change that by writing a sentence rather than editing a rota grid.

Can it take a regular weekly booking?

It books the appointment the caller asks for on the call. Standing weekly work is the kind of thing you set up once in the dashboard rather than re-agreeing on the phone every week — and the line is there for the new enquiries, which are the ones you are currently missing.
