What can it actually do, concretely?
Check what is genuinely free at a given time, book it against the right person, take and price an order from your menu, cancel an existing booking, and put the caller through to your mobile when they ask for a person. How do I know what it did on a call?
Every call has a transcript, and the transcript includes the actions themselves — what it asked your system for and what came back — sitting in order alongside what was said. A booking you do not recognise is a paragraph you can read, not a mystery.
What happens if it gets something wrong?
